So today I decided to share with you all my healthy version of the famous chicken with mango found in so many Thai restaurants. It is a simple recipe to prepare, very tasty and with a very original flavor. I wait for your opinions 🙂

Chicken thai with mango

- 1 cup cooked wild red rice
- 120 gr. Chicken breast
- 1 leek (white and light green part)
- 1/4 onion
- 1 red pepper
- ½ cup chopped mango
- ½ cup chicken broth or vegetables
- 1 clove garlic
- Ginger (to taste)
- 1 tablespoon of tamari sauce
- Salt
Instructions
- Cook the rice according to the instructions of the package
- Finely chop the onion, garlic and ginger and place in a nonstick skillet with broth, cook over low heat
- Meanwhile cut the leek into slices and the pepper into strips
- Put the vegetables in the frying pan about 10 minutes
- Chop the chicken and add it to the vegetables with the tamari sauce; Cook 10 minutes more on medium heat
- Meanwhile, beat the mango until it is puree
- When the vegetables and chicken are already cooked, add the mango puree and put out the fire
- Adjust salt and mix well; Let stand a few minutes and serve with the wild red rice
